Take a sheet of ordinary printer paper and rub a soft pastel across it. The pastel slides. It leaves a faint smudge that wipes off with your finger. Now take a sheet of sanded pastel paper and do the same thing. The pastel grabs the surface instantly, laying down a rich, dense layer of color that stays put. That difference is tooth, and if you work in any dry medium, pastel, charcoal, colored pencil, or graphite, it is the single most important property of your drawing surface.
Tooth is the microscopic roughness of a surface that allows pigment particles to lodge in its texture and adhere. The word refers to the tiny peaks and valleys on the surface of paper, canvas, or prepared panel. A surface with high tooth has deep texture that grips pigment aggressively. A surface with low tooth is smoother and holds less pigment. Tooth is not the same as structure, which is the visible pattern of the surface. A paper can have a pronounced honeycomb pattern but low tooth, or a nearly flat surface with high tooth. The distinction matters because pigment responds to tooth, not to the visible pattern.

What Is Tooth and How Does It Work?
Tooth works by mechanical adhesion. When you drag a stick of pastel or charcoal across a textured surface, the pigment particles break off and fall into the valleys between the surface peaks. The peaks act like tiny walls that trap the particles and prevent them from sliding off. The deeper the valleys, the more pigment the surface can hold. This is why sanded pastel papers, which have actual grit embedded in their coating, can hold 20 or more layers of pastel while smooth printer paper holds almost none.
As layers accumulate, the valleys fill with pigment and the surface becomes smooth. This condition is called burnishing. Once a surface is burnished, it will not accept more pigment. The pastel or pencil slides across the filled surface without depositing color. This is why pastelists choose papers with aggressive tooth when they plan to build up many layers. A paper with shallow tooth fills up quickly and limits the range of values and colors the artist can achieve.

Tooth in Different Papers and Surfaces
Watercolor Paper
Watercolor paper comes in three standard surface finishes: hot-pressed, cold-pressed, and rough. Hot-pressed paper is pressed between heated metal rollers, which flattens the surface and produces the lowest tooth. Cold-pressed paper has a moderate tooth created by pressing between felt-covered rollers. Rough paper is air-dried without pressing, leaving the natural texture of the paper pulp intact and producing the highest tooth. The cold-pressed surface is the most popular for watercolor because it has enough tooth to hold pigment in washes while allowing fine detail work. Pastel Papers
Pastel papers have the widest range of tooth of any art surface. At one end are papers with embossed texture, like Canson Mi-Teintes, which have a visible honeycomb or striped pattern but relatively shallow tooth. These papers hold one or two layers of pastel before the surface fills. At the other end are sanded papers like Fisher 400 and UArt, which have actual grit (silicon carbide or similar abrasive) bonded to the surface. These papers hold many layers and allow aggressive blending and reworking. In between are papers like Clairefontaine PastelMat, which has a soft, velour-like coating that grips pastel particles without the aggressive abrasion of sanded papers. Canvas
Canvas has natural tooth from the weave of the fabric. Cotton canvas has a regular, medium-tooth texture. Linen canvas has a finer, more irregular weave that many painters prefer for its subtle surface. The tooth of canvas affects how oil paint and acrylic paint adhere and how brush marks read on the surface. A coarse canvas weave grabs paint aggressively and creates a textured surface where the paint follows the weave pattern. A fine weave produces a smoother surface suited to detailed work. Applying gesso fills the weave and reduces tooth. Multiple gesso coats with sanding between layers can produce a near-smooth surface from even a coarse canvas.
Prepared Panels
Wood panels prepared with gesso can be sanded to a glass-like smoothness, eliminating almost all tooth. This is the preferred surface for egg tempera and for painters who want fine detail without interference from surface texture. Conversely, panels can be coated with pastel ground or pumice gel to create aggressive tooth for dry media. For pastel and charcoal, tooth is everything. Without it, the medium cannot adhere. Pastel is pure pigment held together with a minimal binder, and it relies entirely on the mechanical grip of the surface. This is why pastel papers are engineered specifically for tooth, and why pastelists are so particular about their surface choice. A pastel painting on the wrong paper will not last.
For colored pencil, tooth determines how many layers you can build. On a smooth surface, colored pencil lays down a thin film that quickly burnishes and will not accept more color. On a toothy surface like PastelMat or sanded paper, colored pencil can be built up in many layers, allowing rich color saturation and smooth transitions. The tooth also allows the pencil to deposit more pigment per stroke, because the grit breaks off more pigment from the pencil core.
For watercolor, tooth affects how washes settle and dry. On a rough paper, the pigment pools in the valleys of the texture, creating granulation effects where the color is uneven and textured. On hot-pressed paper, washes dry flat and even, which is why botanical illustrators prefer it. The tooth also affects how much water the paper can absorb, which influences how long the painter has to work wet-into-wet.
For oil and acrylic paint, tooth matters less for adhesion because the binder (linseed oil or acrylic polymer) forms a film that sticks to the surface chemically as well as mechanically. But tooth still affects the visual quality of the paint surface. A toothy canvas creates a broken, textured paint film where the canvas weave shows through. A smooth panel allows continuous, even paint films that suit photorealistic work.
How to Choose the Right Tooth
Match the tooth to the medium and the technique. For pastel, choose a sanded paper or PastelMat if you plan to build many layers. Choose an embossed paper like Canson Mi-Teintes for quick studies and single-layer work. For charcoal, a paper with moderate tooth like a rough watercolor paper or a dedicated charcoal paper works well. For colored pencil, PastelMat or a medium-tooth sanded paper allows the most layering. For watercolor, cold-pressed paper is the general-purpose choice, hot-pressed for detail work, rough for expressive, textured washes.
For oil and acrylic, the tooth of the surface is determined by the canvas weave and the number of gesso coats. If you want a smooth surface for detailed realism, apply three or more coats of gesso with sanding between coats. If you want a textured surface for expressive brushwork, use a single coat of gesso on a coarse canvas and let the weave show through. You can also add pumice gel or modeling paste to gesso to create custom tooth for impasto techniques.
Test unfamiliar surfaces before committing to a large work. The tooth of a surface can feel very different under the hand than it looks in a catalog. A small test sheet will tell you whether the surface holds the amount of pigment you need and whether it accepts the number of layers your technique requires.
